Sourdough Starter Selena

For one reason or another, I've decided to begin my sourdough journey. I love making challah, but have never tried making a bread using natural yeast.
It seems as if everyone and their mom makes sourdough....Ballerina Farms makes it look so easy....why not me?
I'm following a simple protocol I found online. The first program I found involved doing something called "discarding" which makes no sense to me. You just throw away half the starter every now and again. But why?
I found this one that doesn't involve discarding perfectly good flour in the garbage.
I don't have any of those special razors to make designs at the top of bread, or those funny little baskets people proof their bread in either. But I'm probably getting ahead of myself here. My starter isn't even a day old.
I'm a little worried because I've been lurking in online sourdough bread groups for months, if not years. and have seen way to many pictures of suspicious mold for my liking. I really do not want to accidentally create botulism.
I'm going to follow the plan as closely as I can and hope for the best. I'll even pray over my sourdough.
We know Jesus loves bread because He talked about it all of the time. He even called Himself the Bread of Life because we need Him every single day.
Well let's hope there's grace for my sourdough because I'm gonna need it.
I love the Psalms. Here's my encouraging Psalm for the day:
“I believe that I shall look upon the goodness of the Lord in the land of the living! Wait for the Lord; be strong, and let your heart take courage; wait for the Lord!” Psalm 27:13-14
It's about having faith and hope that no matter what, you will experience the goodness of God while you live. Sometimes we just have to wait on God. Hold my hand, sis. I'll wait with you! Don't give up. If you want, you can make bread with me.
